Gluten-free Mac and Cheese for your Thanksgiving Feast

Thanksgiving is just around the corner and no Thanksgiving table is complete without a decadent mac and cheese dish. This truffle mac and cheese recipe is my go to, friends and family absolutely love it. I make it for every holiday feast. I came across this recipe a few years ago on Pinterest from Meg O , her and her husband came up with the recipe and it is truly divine. Don’t take my word for it, make it and try it. Thank me later!

The béchamel sauce flavored with truffle oil is the key component to this dish and is made from a roux. Just writing about it makes my mouth salivate; this sauce also boasts an herbaceous blend of fresh basil, thyme and rosemary.

I have adapted this recipe to make it gluten free. Gluten is one of the trigger foods that make my auto-immune symptoms worse; so in order to enjoy some of my favorite dishes that call for flour I swap out regular flour for a gluten free flour blend. I love King Arthur all purpose gluten free flour and Bob’s Red Mill all purpose gluten free flour . If you are trying to avoid grains all together Otto’s Cassava flour is also a great alternative to make the roux for this recipe.

I also use gluten free pasta for the mac and cheese, my favorite brand is Jovial Brown rice pasta . Jovial has grain free cassava pasta options as well. Their pastas are the closest thing to regular flour pastas I have found. The recipe calls for cavatappi pasta, however, I have not found a gluten free version yet, so the next best choice would be a gluten free elbow pasta. I used penne pasta in this version.

The recipe says to add the pasta to the béchamel sauce or you can pour it on top as it I did here. Either way is fine.

I also add extra cheddar cheese on the top of my pasta and sauce mix along with the parmesan cheese, I like my mac and cheese extra cheesy, I mean who doesn’t like more cheese right?

To top off the mac and cheese and give it a crispy topping the recipe calls for panko bread crumbs, I use gluten free panko breadcrumbs. I have also added lobster and lump crabmeat to the béchamel mix and made a seafood truffle mac and cheese, it’s so good.
